My food philosophy has always been to cook great food, simply. We work closely with suppliers we trust to make sure the produce is of the highest quality, as well as seasonal. I cook instinctively, without fuss, to bring out the best flavour in the ingredients.
There is nothing better than serving English asparagus in season from the farm down the road or the first ruby oranges or perfumed nectarines of the season from Spain or Italy.
Animal welfare is more my concern these days too, I am making the bold leap to assure all my clients that all chicken & pork, sourced through me will be British free range, Beef and lamb will be grass fed from Britain, New Zealand or Australia. All eggs will be free range but mainly organic. A healthy farm to table philosophy is more important to me than my margin.

I love what I do – and am passionate about my food looking and tasting simply fabulous. I also believe it’s crucial for my team to understand the food we create – how it’s cooked, where it comes from and exactly what goes into each dish. Which is why I make sure that everyone who supports us – from the suppliers to the staff – appreciate my food philosophy.
